What are the three things on my mind this week? How about men’s NCAA basketball tournament, the arrival of spring and gardening season, and sheet pan meals!
1. Tonight–the men’s NCAA basketball tournament continues with the round of 16. I don’t think I can call it by the sweet name it’s widely known as because CBS and the NCAA are pretty
militant particular about not using their copyright terms. I kind of find that ridiculous. Anyway….I absolutely love this time of year! Last week, when the tournament started with 64 teams, I was in basketball heaven! Seriously. I put those two days right up there with Black Friday shopping. Bigger than the SuperBowl. Just about bigger than the Daytona 500. Yes, I’m a bit of a redneck when it comes to my favorite sports. For what it’s worth, I don’t watch MMA, boxing or monster trucks.
My beloved Iowa State Cyclone men lost in the second round of the tournament in what could have been the most epic comeback ever. It ended up being too little, too late. The team will lose four great seniors. They were fun to watch and we will miss them.
2. This week marked the arrival of spring. In Iowa, that means we can consider putting the sweaters away for the year. Note I said consider. I recall one day in May where we actually had a snow day. There’s always the potential for snow and native Iowans will tell you we hold our collective breath until June 1.
And since it’s spring, it’s also time to start planning the garden. We’ve had a garden since the first summer we were married in 1994. Turns out, my husband was the gardener and I was just along for the ride. I’m pretty sure that’s what he thought, too. I pretty much suck at it, but take a swing at it each year just to try to improve my skills. This year, I’m going to try something new and start my seeds indoors as a way to avoid spending big money at the greenhouse.
3. Am I the only one who hasn’t heard of a sheet pan meal? As a total Pinterest addict, this is hard to admit. I had not heard of them until a couple of weeks ago when they showed up in my feed. Imagine my surprise when some of the blog posts featuring them were as old as 2014! Where have these been all my life?? I’ve made three different ones in the last week and they are awesome! Not Instant Pot level of awesome, but awesome nonetheless. I see a blog post in my future regarding these simple meals that have great impact.

This Smoked Sausage Sheet Pan Dinner with Seasoned Potato Wedges recipe is my favorite one I’ve tried, so far. It comes from Eat At Home and it was wonderful! I’m not a huge fan of brussels sprouts when they’re boiled, but roasting them in the oven yields some pretty tasty results! The recipe calls for a nice spice mix that really helps to bring the bland vegetables alive! Prep time was minimal and it was done in less than an hour. That’s my kind of weeknight cooking!
I ate the last of this today for lunch at work and I was really sad it was gone. Great stuff!
